This grilled halibut with tomatoes and hearts of palm is a light and sophisticated dish perfect for warm-weather dining. The firm, flakey texture of the white fish pairs beautifully with the juicy acidity of heirloom tomatoes, while the hearts of palm add a unique, buttery crunch. By grilling the fish simply with fresh lemon zest and seasoning, you allow the natural flavours of the seaside to shine through without the need for heavy, calorie-dense sauces.
As a diabetes-friendly main course, this recipe is naturally low in carbohydrates and rich in lean protein and heart-healthy oils. The vibrant colours and fresh basil make it an impressive choice for entertaining, yet it remains simple enough for a quick midweek dinner. Serve it exactly as it is for a refreshing light lunch, or alongside some steamed new potatoes for a more restorative evening meal.
Ingredients for Grilled Halibut with Tomatoes and Hearts of Palm
60ml olive oil, plus more for grill and drizzling
1 lemon
4 (5–170g ) skinless, boneless halibut fillets
Kosher salt, freshly ground pepper
900g mixed heirloom tomatoes, sliced
1/2 cup sliced drained hearts of palm
Torn basil leaves (for serving)
How to make Grilled Halibut with Tomatoes and Hearts of Palm
Prepare a grill for medium heat; oil grates. Finely grate 1 teaspoon lemon zest directly onto halibut and lightly drizzle with oil; season with salt and pepper. Grill halibut, turning once, until browned on both sides and just opaque in the centre, about 5 minutes.
Meanwhile, combine tomatoes, hearts of palm, and 60ml oil in a medium bowl; squeeze in 2 tablespoons juice from lemon and toss to combine. Season with salt and pepper.
Toss basil into tomato salad. Serve halibut with tomatoes and dressing spooned over.
