This vibrant garden wrap is a celebration of fresh produce and plant-based nutrition. Combining the crunch of broccoli and shredded greens with juicy cherry tomatoes and protein-rich chickpeas, it offers a satisfying texture that feels both light and hearty. The zingy dressing, made with red wine vinegar, garlic, and fresh herbs, ties the elements together with a bright, Mediterranean-inspired flavour profile that improves as it marinates.
Ideal for a nutritious weekday lunch or a portable picnic option, these vegan wraps are incredibly versatile. You can prepare the filling in advance, making it an excellent choice for meal prepping. Serve them in wholemeal tortillas for a fibre-rich meal that keeps you energised throughout the afternoon. For those who enjoy a bit of heat, a dash of hot sauce provides the perfect savoury contrast to the crisp, raw vegetables.
Ingredients for Fresh Garden Wrap
1 cup cherry tomatoes, cut in half
1 cup shredded kale or bok choy
1 courgette, chopped
1 cup broccoli florets
1/2 cup chopped spring onions
1 (425g) can garbanzo beans, drained and rinsed
1 tablespoon chopped Kalamata olives
3 tablespoons red wine vinegar
1 clove garlic, crushed
1 tablespoon chopped fresh parsley
1/2 tablespoons chopped fresh coriander
6 to 8 whole wheat or corn tortillas
Hot sauce (optional)
How to make Fresh Garden Wrap
Place the vegetables and beans in a large bowl. Sprinkle the olives over the vegetables. Combine the vinegar, garlic, parsley, and coriander in a small bowl. Pour over the vegetables and toss to mix.
Cover and chill for at least 1 hour before serving. To serve, place a line of the vegetable mixture down the centre of a tortilla. Drizzle with hot sauce, if desired, roll up, and enjoy.
